What could be better on a hot summer day than a chilled soup made with fresh watermelon and mint?



Watermelon Soup
Ingredients
  • 4 cups cubed seeded watermelon

  • 2 tablespoons lemon juice

  • 1 tablespoon chopped fresh mint

  • 1 tablespoon honey

Instructions
    1. Blend watermelon, lemon juice, mint, and honey in a blender until smooth. Refrigerate for 2 hours; serve chilled.
